Hot Desserts Recipes - Surprise Lemon Pudding

Ingredients

  • 75g/3oz or 6 tbsp butter, softened

  • 175g/6oz or 1 1/2 cups soft brown sugar

  • 4 eggs, separated

  • grated rind and juice of 4 lemons

  • 50g/2oz or 1/2 cup self-raising flour

  • 120ml/4fl oz or 1/2 cup milk


Method:

  1. Preheat the oven to 180'C/350'P /Gas 4, then butter an 18cm/7in soufflé dish or cake tin and stand it in a roasting tin

  2. Beat the butter and sugar together in a large bowl until pale and very fluffy. Beat in one egg yolk at a time, beating well after each addition and gradually beating in the lemon rind and juice until well mixed; do not worry if the mixture curdles a little at this stage.

  3. Sift the flour and stir into the lemon mixture until well mixed, then gradually stir in the milk.

  4. Whisk the egg whites in a separate bowl until stiff peaks form but the whites are not dry, then lightly, but thoroughly, fold into the lemon mixture in three batches. Carefully pour the mixture into the soufflé dish or cake tin, then pour boiling water into the roasting tin to come halfway up the sides

  5. Bake the pudding in the centre of the oven for about 45 minutes, or until risen, just firm to the touch and golden brown on top. Serve at once.
