Hot Desserts Recipes - Plum and Walnut Crumble

Ingredients:

  • 75g/3oz/3/4 cup walnut pieces

  • 900g/2lb plums

  • 75g/6oz/1.5 cups demerara sugar

  • 75g/3oz/6 tbsp butter or hard margarine, cut into dice

  • 75g/6oz/1.5 cups plain flour


Method:

  1. Preheat the oven to 180'C/350'F /Gas 4. Spread the nuts on a baking sheet and place in the oven for 8-10 minutes, evenly colored.

  2. Butter a 1.2litre/2 pint/5 cup baking dish. Halve and stone the plums, then put them into the dish and stir in the nuts and half of the demerara sugar.

  3. Rub the butter or margarine into the flour until the mixture resembles coarse crumbs. (Alternatively, use a food Processor.) Stir in the remaining sugar and continue to rub in fine crumbs are formed.

  4. Cover the fruit with the crumb mixture and press it down. Bake the pudding for about 45 minutes, until the top is golden brown and the fruit tender.

  5. Cook's Tips: To make an oat and cinnamon crumble, rolled oats for half the folly in the crumble mixture and add 2.5ml-5ml/1/2 -1 tsp grilled cinnamon, to taste.
