Hot Desserts Recipes - Pear and Blackberry Brown Betty

All this delicious fruity pudding needs to go with it is

some hot home-made custard, pouring cream or ice cream

Ingredients

  • Serves 4-6 75g/3oz/6 tbsp butter

  • diced 175g/60z/3 cups breadcrumbs

  • 450g/llb ripe pears 450g/llb/4 cups  

  • Blackberries grated rind and

  • Juice of 1 small orange 115g/40z/V

  • Cup demerara sugar extra demerara sugar, for sprinkling


Method:

  1. Preheat the oven to 180'C/350'P /Gas 4. Heat the butter jp a heavy-based frying pan over a moderate heat and add the breadcrumbs. Stir until golden.

  2. Peel and core the pears, then cut them into thick slices and mix with the blackberries, orange rind and juice.

  3. Mix the demerara sugar with the breadcrumbs, then layer with the fruit in a 900ml/lIA pint/3 cup buttered baking dish, beginning and ending with a layer of sugared breadcrumbs.

  4. Sprinkle the extra demerara sugar over the top. Cover the baking dish, then bake the pudding for 20 minutes. Uncover the pudding, then bake for a further 30-35 minutes, until the fruit is cooked and the top is brown and crisp.
