Hot Desserts Recipes - Easy Chocolate and Orange Soufflé

Ingredients

  • 50g/2oz or 1/4 cup pudding rice

  • 50g/2oz or 1/2 cup soft brown sugar

  • 600ml/1 pint or 2 1/2 cups milk

  • grated rind of 1 orange

  • 90ml/6 tbsp fresh orange juice

  • 3 eggs, separated

  • chocolate, grated

  • icing sugar, for sprinkling


Method:

  1. Preheat the oven to 200'C/ 4OO'F /Gas 6. Butter a shallow 1.75litre/3 pint/7 1/2 cup ovenproof dish.

  2. Pour the milk into a heavy-based saucepan, sprinkle over the semolina and brown sugar, then heat, stirring the mixture all the time, until boiling and thickened.

  3. Remove the pan from the heat; beat in the orange rind and juice, egg yolks and all but 15ml/1 tbsp of the chocolate.

  4. Whisk the egg whites until stiff but not dry, then lightly fold into the semolina mixture in three batches. Spoon the mixture into the dish and bake for about 30 minutes until just set in the centre and risen. Sprinkle the top with the reserved chocolate and the icing sugar, then serve immediately.
