- Bananas with Rum and Raisins
Ingredients

40g/1 1/2oz or
1/4 cup seedless raisins

75ml/5 tbsp dark
rum
-
50g/2oz or 4 tbsp
unsalted butter
-
50g/1oz or 1/2
cup soft light brown sugar
-
4 bananas, peeled
and halved lengthways
-
1.5ml/1/4 tsp
grated nutmeg
-
1.5ml/1/4 tsp
ground cinnamon
-
30ml/2 tbsp
slivered almonds, toasted

chilled cram or
vanilla ice cream, to serve
Method:

Put the raisins
in a bowl with the rum. Leave them to soak for about
30 minutes to plump up.

Melt the butter
in a frying pan, add the sugar and stir until
completely dissolved. Add the bananas and cook for a
few minutes until tender.

Sprinkle the
spices over the bananas, then pour over the rum and
raisins. Carefully set alight using a long taper and
stir gently to mix.

Scatter over the
slivered almonds and serve immediately with chilled
cream or vanilla ice cream, if you wish.

Cook's Tip:
Stand well back when you set the
rum alight and
shake the pan gently until the flames subside.
