Hot Desserts Recipes - Bananas with Rum and Raisins

Ingredients

  • 40g/1 1/2oz or 1/4 cup seedless raisins

  • 75ml/5 tbsp dark rum

  • 50g/2oz or 4 tbsp unsalted butter

  • 50g/1oz or 1/2 cup soft light brown sugar

  • 4 bananas, peeled and halved lengthways

  • 1.5ml/1/4 tsp grated nutmeg

  • 1.5ml/1/4 tsp ground cinnamon

  • 30ml/2 tbsp slivered almonds, toasted

  • chilled cram or vanilla ice cream, to serve


Method:

  1. Put the raisins in a bowl with the rum. Leave them to soak for about 30 minutes to plump up.

  2. Melt the butter in a frying pan, add the sugar and stir until completely dissolved. Add the bananas and cook for a few minutes until tender.

  3. Sprinkle the spices over the bananas, then pour over the rum and raisins. Carefully set alight using a long taper and stir gently to mix.

  4. Scatter over the slivered almonds and serve immediately with chilled cream or vanilla ice cream, if you wish.

  5. Cook's Tip: Stand well back when you set the rum alight and shake the pan gently until the flames subside.
