Hot Desserts Recipes - Apple Soufflé Omelet

Ingredients

  • 4 eggs, separated

  • 30ml/2 tbsp single cream

  • 15g/1/2oz or 1 tbsp caster sugar

  • 15g/1/2oz or 1 tbsp butter

  • sifted icing sugar, for dredging

FOR THE FILLING

  • 1 eating apple, peeled, cored and sliced

  • 25g/1oz or 2 tbsp butter

  • 25g/1oz or 2 tbsp soft light brown sugar

  • 45ml/3 tbsp single cream


Method:

  1. To make the filling, sauté the- apple slices in the butter and sugar until just tender. Stir in the cream and keep warm, while making the omelets

  2. Place the egg yolks in a bowl with the cream and sugar and beat well. Whisk the egg whites until stiff peaks form, then fold into the yolk mixture.

  3. Melt the butter in a large heavy-based frying pan, pour in the soufflé mixture and spread evenly. Cook for 1 minute until golden underneath, then place under a hot grill to brown the top.

  4. Slide the omelets on to a plate, spoon the apple mixture on to one side, then fold over. Dredge the icing sugar over thickly, then quickly mark in a criss-cross pattern with a hot metal skewer. Serve the omelets immediately

  5. Cook's Tip. In the Slimmer months, make the filling for the omelet using fresh raspberries or strawberries.
