Hot Desserts Recipes - Coffee Cake Recipe

Ingredients

  • 175g/6oz margarine

  • 175g/6oz caster sugar

  • 3 eggs

  • 175g/6oz self-raising flour (sifted)

  • 50ml/2fl oz rum

  • 225ml/8fl oz strong coffee

  • 225ml/8fl oz double cream

  • 2 drops vanilla essence

  • 25g/1oz toasted flaked almonds

Serves 4-6


Method:

  1. Preheat the oven to 190°C/375°F/Gas mark 5.

  2. Cream the margarine and sugar until light and fluffy. Gradually beat in the eggs, and fold in the flour. Spoon into a greased cake tin. Bake for 40 to 45 minutes. Leave for 4 minutes then turn out on to a wire tray to cool slightly.

  3. Pour the rum into the coffee and sweeten to taste. Put the cake back in the tin and pour the coffee mixture over.

  4. Whip the cream and add the vanilla essence. Turn the cake onto a plate, spread with whipped cream and decorate with toasted almonds.
