Hot Desserts Recipes - Baked Apples Figs Recipe

Ingredients

  • 4 small dessert apples

  • 4 large figs

  • 50g/2oz marzipan

  • 1 tablespoon whole blanched almonds (finely chopped)

  • 1 small piece of stem ginger (finely chopped)

  • 1 tablespoon golden syrup

  • 3 tablespoons cold water 

For the Amaretti cream:

  • 10 Amaretti biscuits

  • 250g/9oz fromage frais

  • 1 tablespoon icing sugar (sifted)

  • 1 tablespoon amaretto liqueur

Serves 4


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4.

  2. Core the apples and score horizontally around their middles with the point of a sharp knife. Cut the figs lengthways, almost through into quarters, leaving them intact at the base.

  3. Mix the marzipan, almonds, ginger and syrup until smooth and roll into 8 balls. Place them in the centre of each fruit.

  4. Place the apples in a baking dish with the cold water and bake for 30 minutes. Add the figs to the tray and bake for another 10 to 15 minutes or until both types of fruit are tender.

  5. For the Amaretti cream, roughly crush the Amaretti biscuits and mix with the remaining ingredients.

  6. To serve, put 1 apple and 1 fig on each plate and top with a little of the cream. Serve hot, with the remaining cream separate.
