 Gateaux Recipes - Fruit Gateau with Heartsease

Ingredients

  • 90g soft margarine

  • 100g sugar

  • 10ml clear honey

  • 150g self raising flour

  • 2.5ml baking powder

  • 30ml milk

  • 2 eggs

  • 15ml rose water

  • 15ml cointreau

To decorate

  • 16 heartsease pansy flowers

  • 1 egg white, lightly beaten

  • caster sugar

  • icing sugar

  • 450g strawberries

  • strawberry leaves


Method:

  1. Preheat the oven to 190.C/375"F/Gas 5. Grease and lightly flour a ring mould. Put the soft margarine, sugar, honey, flour, baking powder, milk and eggs into a mixing bowl and beat well for 1 minute. Add the rose water and the Cointreau and mix well.

  2. Pour the mixture into the mould and bake for 40 minutes. Allow to stand for a few minutes, and then turn out on to a serving plate.

  3. Crystallize the heartsease pansies by painting them with the lightly beaten egg white and sprinkling with caster sugar. Leave to dry.

  4. Sift icing sugar over the cake. Fill the centre of the ring with strawberries - if they will not all fit, place some around the edge. Decorate with the crystallized heartsease flowers and some strawberry leaves.
