Dessert Recipes - Walnut Meringue Pie Recipe
Ingredients

3
egg whites,
room temperature
-
1/4 tsp salt
-
1/2 tsp baking powder
-
1
cup granulated sugar
-
1 tsp vanilla extract
-
2/3 cup
broken walnuts
-
20 Ritz Crackers,
broken in fourths
-
4 cups cut-up
fresh fruits in season, or canned, very well-drained

1/2 cup heavy cream,
whipped, unsweetened
Method:
-
Beat egg whites until soft peaks form. Add salt and
baking powder.

Gradually beat in sugar; continue
beating until stiff and glossy. Add vanilla extract.
Lightly fold in next two ingredients.

Spread mixture
over bottom and sides of well-greased pie plate.
Build up sides.

Bake in a preheated slow oven
(325°F) 25 to 30 minutes. Cool completely on wire
rack.

Just before serving, fill center with fruit.
Serve cream separately.
