Dessert Recipes - Walnut Meringue Pie Recipe

Ingredients                

  • 3 egg whites, room temperature

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • 2/3 cup broken walnuts

  • 20 Ritz Crackers, broken in fourths

  • 4 cups cut-up fresh fruits in season, or canned, very well-drained

  • 1/2 cup heavy cream, whipped, unsweetened


Method:

  1. Beat egg whites until soft peaks form. Add salt and baking powder.

  2. Gradually beat in sugar; continue beating until stiff and glossy. Add vanilla extract. Lightly fold in next two ingredients.

  3. Spread mixture over bottom and sides of well-greased pie plate. Build up sides.

  4. Bake in a preheated slow oven (325°F) 25 to 30 minutes. Cool completely on wire rack.

  5. Just before serving, fill center with fruit. Serve cream separately.
