Dessert Recipes - Tennessee Jam Cake Recipe
Ingredients

1 cup margarine

1 1/2 cups granulated
sugar

One 10-oz jar Kraft Strawberry,
Raspberry or Blackberry
Preserves

4
eggs
-
2 1/2 cups flour

Brown Sugar
Frosting
-
Confectioners' sugar
-
1 tsp soda
-
1 tsp nutmeg
-
1 tsp cinnamon
-
1 tsp cloves
-
1/4 tsp salt

1 cup buttermilk
-
1 1/2 cups chopped
pecans
Method:

Cream margarine and granulated sugar until light and
fluffy. Blend in preserves and eggs.

Add combined
dry ingredients to creamed mixture, alternately with
buttermilk, mixing well after each addition. Stir
in nuts. Pour into three greased and floured 9-inch
layer pans.

Bake at 3500F, 30-35 minutes. Cool 10
minutes; remove from pans. Fill and frost sides with
Brown Sugar Frosting.

Sift confectioners' sugar over
top of cake.
Brown Sugar Frosting:
Combine 1 cup packed brown sugar, 1/2 cup margarine
and 1/4 cup milk; bring to boil, stirring
constantly. Remove from heat; cool 10 minutes.
Gradually add 3 cups sifted confectioners' sugar,
beating until well blended.
