Dessert Recipes - Tennessee Jam Cake Recipe

Ingredients 

  • 1 cup margarine

  • 1 1/2 cups granulated sugar

  • One 10-oz jar Kraft Strawberry, Raspberry or Blackberry Preserves

  • 4 eggs

  • 2 1/2 cups flour

  • Brown Sugar Frosting       

  • Confectioners' sugar

  • 1 tsp soda

  • 1 tsp nutmeg

  • 1 tsp cinnamon

  • 1 tsp cloves

  • 1/4 tsp salt

  • 1 cup buttermilk

  • 1 1/2 cups chopped pecans


Method:

  1. Cream margarine and granulated sugar until light and fluffy. Blend in preserves and eggs.

  2. Add combined dry ingredients to creamed mixture, alternately with butter­milk, mixing well after each addition. Stir in nuts. Pour into three greased and floured 9-inch layer pans.

  3. Bake at 3500F, 30-35 minutes. Cool 10 minutes; remove from pans. Fill and frost sides with Brown Sugar Frosting.

  4. Sift confectioners' sugar over top of cake.

Brown Sugar Frosting: Combine 1 cup packed brown sugar, 1/2 cup margarine and 1/4 cup milk; bring to boil, stirring constantly. Remove from heat; cool 10 minutes. Gradually add 3 cups sifted confectioners' sugar, beating until well blended.
