Dessert Recipes - Super Wheat Germ Zucchini Bread Recipe

Ingredients              

  • 1 1/4 cups Kretschmer Wheat Germ, regular

  • 3 cups flour

  • 3 tsp baking powder

  • 1 tsp salt

  • 2 taps cinnamon

  • 1 cup chopped nuts

  • 2 eggs

  • 1 3/4 cups sugar

  • 2 tsp vanilla

  • 2/3 cup cooking oil

  • 3 cups (about 3 medium­size) grated zucchini

Makes 2 loaves


Method:

  1. Mix together wheat germ, flour, baking powder, salt, cinnamon and nuts.

  2. Beat eggs until light-colored and fluffy. Beat in sugar, vanilla and oil. Stir in zucchini.

  3. Gradually stir in wheat-germ mixture. Turn into 2 greased and floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.

  4. Bake in 350°F oven for 1 hour, until a pick inserted into center comes out clean.

  5. If using glass pans, bake at 325°F. Cool for 5 to 10 minutes. Remove from pans and cool on rack.
