Dessert Recipes - Southern Coconut Pie Recipe

Ingredients         

• 2 tbsp melted butter

• 1/3 cup sugar

• 1/4 tsp salt

• 3 eggs, slightly beaten

• 1 cup light corn syrup

• 1 tsp vanilla

• 1/2 tsp almond extract

• 2/3 cup Baker's Cookie Coconut

• 1 unbaked 9-inch pie shell

Method:

1. Blend butter, sugar and salt. Add eggs, syrup and extracts; stir well.

2. Sprinkle coconut over bottom of pie shell. Pour filling over coconut.

3. Bake in moderate oven (375°F) 40­50 minutes. Cool.

4. Serve with ice cream, prepared Dream Whip Whipped Topping or whipped cream, if desired.
