Dessert Recipes - Snowy Apricot Bars Recipe

Ingredients 

  • One 6-oz package dried apricots/1 1/3 cups

  • 1/2 cup firm margarine or butter

  • 1/2 cup granulated sugar

  • 2 1/2 cups Bisquick Baking Mix

  • 2 cups packed brown sugar

  • 4 eggs, beaten

  • 2/3 cup Bisquick Baking Mix

  • 1 tsp vanilla

  • 1 cup chopped nuts

  • powdered sugar


Method:

  1. Place apricots in 2-quart saucepan; add enough water to cover. Heat to boiling; reduce heat. Simmer uncovered 10 minutes; drain. Cool; chop and reserve.

  2. Heat oven to 350F. Cut margarine into granulated sugar and 2 1/2 cups Baking Mix until crumbly. Pat in un-greased jelly roll pan, 15 1/2 x 10-inch.

  3. Bake 10 minutes. Beat brown sugar and eggs. Stir in apricots, 2/3 cup Baking Mix, the vanilla and nuts. Spread over baked layer.

  4. Bake 30 minutes longer. Cool completely; cut into bars, about 2 x 1 inches each. Roll in powdered sugar.
