Dessert Recipes - Sierra Snow Cap Recipe
Ingredients

1 1/4 cups Sun-Sweet Apricots
-
1 1/4 cups water
-
1/2 cup sugar 5 egg whites, unbeaten
-
1/4 tsp
salt
-
3 to 4 Tbs brandy (or
1/4 tsp
almond extract)
Method:

Cook apricots in water 10 minutes, until soft. Cool.
Drain and measure 1 cup.

Chop and combine with
sugar, egg whites and salt in top of double boiler.

Beat over boiling water with rotary beater until
thick enough to hold its shape, about 5 minutes.
-
Remove from heat; gently fold in brandy.
-
Serve warm
or cold, garnished with reserved apricots.
