Dessert Recipes - Sierra Snow Cap Recipe

Ingredients 

  • 1 1/4 cups Sun-Sweet Apricots

  • 1 1/4 cups water

  • 1/2 cup sugar 5 egg whites, unbeaten

  • 1/4 tsp salt

  • 3 to 4 Tbs brandy (or 1/4 tsp almond extract)


Method:

  1. Cook apricots in water 10 minutes, until soft. Cool. Drain and measure 1 cup.

  2. Chop and combine with sugar, egg whites and salt in top of double boiler.

  3. Beat over boiling water with rotary beater until thick enough to hold its shape, about 5 minutes.

  4. Remove from heat; gently fold in brandy.

  5. Serve warm or cold, garnished with reserved apricots.
