Dessert Recipes - Saffron Loaves Recipe

Ingredients     

  • 1 cup butter

  • 1 cup sugar

  • 3 eggs, separated

  • 2 medium ripe Dole bananas

  • 1 cup milk

  • 3 1/2 cups flour

  • 4 tsp baking powder

  • 1 tsp salt

  • 1/8 tsp saffron

  • 1 cup seedless raisins

  • 1/2 cup coarsely chopped peanuts

Makes 2 loaves


Method:

  1. Cream butter and sugar until light and fluffy. Beat in egg yolks until blended.

  2. Mash bananas to make 1 cup Combine with milk. Combine remaining ingredients.

  3. Add to creamed mixture alternately with milk mixture until blended. Beat egg whites until stiff peaks form, but not dry. Fold into batter.

  4. Pour into two 8 x 4 x 2 1/2-inch well-greased loaf pans.

  5. Bake in a 350°F oven 50 to 60 minutes until cake tests done. Cool 10 minutes.

  6. Invert onto wire racks to complete cooling.
