Dessert Recipes - Quick Buttermilk Bread Recipe

Ingredients   

  • 4 to 4 1/2 cups all-purpose flour                                     

  • 2 packages Red Star Instant Blend Dry Yeast      

  • 3 Tbs sugar  

  • 1 tsp salt  

  • 1/2 tsp soda    

  • 1 1/4 cups buttermilk                      

  • 1/2 cup shortening

  • 1/2 cup water

Makes 24 rolls


Method:

  1. Preheat oven to 400°F. In large mixer bowl, combine 1 1/2 cups flour, yeast, sugar, salt and soda; mix well.

  2. In sauce­pan, heat  buttermilk, water and shortening until warm (120°F to 130°F, shortening does not need to melt). Add to flour mixture. Blend at low speed until moistened; beat 3 minutes at medium speed.

  3. By hand, gradually stir in enough remaining flour to make a firm dough. Knead on floured surface until smooth and elastic, about 5 minutes.

  4. Place in greased bowl, turning to grease top. Cover; let rise in warm place until light and doubled, about 20 minutes. Punch down dough.

  5. Divide dough into 24 pieces. Form into balls; place on greased cookie sheet or 15 x 10-inch pan. Cover; let rise in warm place until almost doubled, about 20 minutes.

  6. Bake at 400°F for 15 to 20 minutes until golden brown. Remove from pan; brush with butter, if desired. Cool on racks.
