Dessert Recipes - Queen's Lace Cookies Recipe

Ingredients 

  • 1/4 cup Squeeze Parkay Margarine                             

  • 1/4 cup granulated sugar            

  • 2 Tbs dark corn syrup                  

  • 1 tsp brandy   

  • 1/2 cup flour   

  • 1/2 tsp grated lemon rind    

  • 1/4 tsp ginger          

  • Brandied Whipped Cream (below)


Method:

  1. Heat margarine, granulated sugar and corn syrup over low heat in heavy skillet or saucepan, stirring until sugar is dissolved.

  2. Remove from heat; beat in brandy and combined flour, lemon rind and ginger. Drop level teaspoonfuls of batter, 3 inches apart, onto greased Cookie sheet.

  3. Bake at 350°F, 8-10 minutes or until deep golden brown. Remove from oven; wait 10-15 seconds for cookies to set.

  4. Remove cookies one at a time; turn smooth-side up and wrap around handle of a wooden spoon spread with margarine. Slip cookie off; repeat with remaining cookies, working quickly.

  5. If cookies become too firm to roll, return to oven for 1-2 minutes to soften. When ready to serve, fill cookies with Brandied Whipped Cream.

Brandied Whipped Cream:

1 cup heavy cream  1 tbsp brandy

2 Tbs confectioners' sugar

Whip cream until slightly thickened; gradually add sugar and brandy, beating until stiff peaks form. Makes enough to fill approximately 1 1/2 dozen cookies.
