Dessert Recipes - Prize Coconut Cake Recipe

Ingredients 

  • 1 3/4 cups sifted cake flour

  • 2 1/4 tsp Calumet Baking Powder

  • 3/4 tsp salt

  • 1/2 cup butter or margarine

  • 1 cup plus 2 Tbs sugar

  • 2 eggs

  • 2/3 cup milk

  • 1 tsp vanilla

  • 2/3 cup Baker's Cookie or Angel Flake Coconut


Method:

  1. Measure sifted flour, baking powd(3r and salt; sift together. Cream butter.

  2. Gradually add sugar; cream until light and fluffy. Add eggs, one at a time, beating well after each addition.

  3. Alternately add flour mixture and milk, beating after each addition until smooth. Stir in vanilla and coconut. Pour batter into two 8-inch layer pans, lined on bottoms with paper.

  4. Bake in moderate oven (350°F) 30-35 minutes. Cool in pans 10 minutes; then remove from pans and finish cooling on racks. Frost with Golden Coconut Frosting.
