Dessert Recipes - Pioneer Corn Bread Recipe

Ingredients     

  • 2 cups Stone Ground Yellow Corn Meal

  • 2 tsp baking powder

  • 1 tsp soda

  • 1 tsp salt

  • 1 egg, beaten slightly

  • 1 cup buttermilk

  • 1/4 cup cooking oil or melted shortening

Makes Twelve 2 1/2 x 1 1/8-inch muffins


Method:

  1. Combine first four ingredients in bowl; mix well.

  2. Add buttermilk, egg and oil or melted shortening. Stir just until dry ingredients are moistened; do not beat.

  3. Pour into well-greased 8-inch square baking pan dusted with Yellow Com Meal.

  4. Bake in hot oven (425°F) 20 minutes or until done and a light golden brown.

Variations: Follow recipe for Pioneer Com Bread above and change as suggested below:

Sweet Milk Corn Bread: Substitute sweet milk for butter­milk. Increase baking powder to 3 tsp and omit soda.

Muffins: Fill well-greased medium size muffin cups % full. Reduce baking time to 12-15 minutes or until done and a light golden brown.
