Dessert Recipes - Pineapple Crème Brftlee Recipe

Ingredients 

• 3 cups heavy cream

• One 2-inch piece vanilla bean (split lengthwise) or 2 tsp vanilla extract

• 2 tsp corn starch

• 6 egg yolks

• 1 cup Coco Casa Pilla Colada Mix

• 2 Tbs cognac or brandy

• 2 Tbs dark brown sugar

Method:

1. In a saucepan, combine heavy cream and vanilla; heat until scalded. In a bowl, beat egg yolks and com starch until smooth.

2. Slowly stir in scalded cream, Pilla Colada mix and liquor. Strain mixture into a baking dish. Place dish in a pan containing 1 inch hot water.

3. Bake at 3250F for 35 to 40 minutes or until set. Chill several hours or overnight.

4. Before serving, sprinkle surface with brown sugar. Place dish over ice in a baking pan.

5. Place under a preheated broiler until sugar is melted, about 5 minutes. Serve immediately.
