Dessert Recipes - Peanut Butter Picnic Cake Recipe

Ingredients 

  • 1/2 cup Parkay Margarine

  • 1 1/3 cups sugar

  • 1/4 cup peanut butter

  • 2 eggs

  • 1 tsp vanilla

  • 2 cups flour

  • 1 Tbs baking powder

  • 1 tsp salt

  • 1 cup milk

  • One 10-oz jar Kraft Strawberry

  • Preserves or Grape Jelly

  • Peanut Butter Frosting

Peanut Butter Frosting:

  • 1/4 cup Parkay margarine

  • 1/4 cup peanut butter

  • 1 tsp vanilla

  • Dash of salt

  • 2 1/2 cups sifted confectioners' sugar

  • 3 Tbs milk


Method:

  1. Cream margarine and sugar until light and fluffy. Blend in peanut butter, eggs and vanilla.

  2. Add combined dry ingredients alternately with milk, mixing well after each addition. Pour into two greased and floured 8-or 9-inch layer pans.

  3. Bake at 350°F, 35-40 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans.

  4. Spread 2/3 cup preserves between layers. Frost with Peanut Butter Frosting. Decorate with additional preserves.

Note: Cream margarine; blend in peanut butter, vanilla and salt. Add sugar alternately with milk, beating until light and fluffy.
