Dessert Recipes - Peach Upside-Down Cake Recipe

Ingredients 

  • Parkay Margarine

  • 1/2 cup packed brown sugar

  • 1 1/2 cups fresh peach slices

  • 2/3 cup granulated sugar

  • 1 egg

  • 1/2 tsp vanilla

  • 1 1/2 cup flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup milk


Method:

  1. Melt 3 Tbs margarine in 8-or 9-inch oven-proof skillet or layer pan; sprinkle with brown sugar.

  2. Arrange fruit in skillet. Cream 1/3 cup margarine and granulated sugar until light and fluffy. Blend in egg and vanilla.

  3. Add combined dry ingredients alternately with milk, mixing well after each addition.

  4. Carefully pour batter over fruit. Bake at 350°F, 40-45 minutes or until wooden pick inserted in center comes out clean.

  5. Immediately invert onto serving platter.

Variation: Substitute 16-oz can peach slices, drained, for fresh peaches.
