Dessert Recipes - Old-Fashioned Jelly Roll Recipe
Ingredients

eggs
-
3/4 cup
sifted all-purpose or cake flour

1 tsp baking powder
-
1/4 tsp salt
-
3/4 cup sugar
-
1 tsp vanilla
extract or 1 Tbs grated orange peel
-
Confectioners sugar
-
One 10-oz jar Welch's Concord Grape
Jelly
Method:

In electric mixer bowl, let eggs warm to room
temperature (about 1 hour). Sift together flour, baking
powder and salt; set aside.

At high speed, beat eggs
until thick and lemon colored. Gradually beat in sugar,
2 Tbs at a time, continuing to beat until very thick
and light (about 5 minutes).

At low speed, blend in
sifted dry ingredients and vanilla just until combined.
Spread evenly in a jelly-roll pan, 15 x 10 1/2 X 1 inches,
lined with greased wax paper.

Bake in a preheated hot
oven (400°F) until surface springs back when gently
pressed with fingertip (about 10 to 13 minutes).

Sift
confectioners sugar on a clean towel in a 15 x 10-inch
oblong. With sharp knife, loosen sides of cake from pan.

Turn onto the sugared towel; gently peel off wax paper
and trim off crisp edges. Starting with 10-inch side,
roll cake in towel; place seam side down on wire rack
until cool.

Gently unroll cake, remove towel and spread
with jelly (beaten with fork to spreading consistency).

Reroll and place seam side down, on serving plate; cover
loosely with foil. Chill at least 1 hour. Serve topped
with sifted confectioners sugar.
