Dessert Recipes - Old-Fashioned Cocoa Mint Cake Recipe

Ingredients             

• 2/3 cup butter

• 1 2/3 cups granulated sugar

• 3 eggs

• 2 cups all-purpose flour

• 2/3 cup Hershey's Cocoa

• 1 1/4 tsp baking soda

• 1/4 tsp baking powder

• 1 tsp salt

• 1 1/3 cups milk

• 1/2 cup crushed peppermint candy

• Cocoa Peppermint Icing (below)

Method:

1. Cream butter, sugar and eggs until fluffy, and beat vigorously 3 minutes (high speed of mixer).

2. Combine flour, cocoa, baking soda, baking powder and salt; add alternately with milk to creamed mixture.

3. Blend in crushed candy. Pour batter into 2 greased and floured 9-inch cake pans.

4. Bake in a moderate oven (350°) for 35 minutes. Cool 10 minutes before removing from pans.

5. Ice cake with Cocoa Peppermint Icing.
