Dessert Recipes - Oatmeal Muffins Recipe

Ingredients     

• 3 cups Oatmeal

• 3 Tbs sugar

• 3 tsp baking powder

• 3/4 tsp salt

• 1 1/2 cups milk

• 1 egg, beaten

• 3 Tbs cooking oil or melted shortening

Makes 12 muffins

Method:

1. Combine first 4 ingredients in bowl; mix. Combine milk, egg and oil or melted shortening; beat slightly.

2. Add liquids to dry ingredients; stir just until dry ingredients are moistened.

3. Fill greased muffin cups (2 1/2 x 1 1/4 inches) about 7/8 full using an equal amount of batter in each cup.

4. Bake in hot oven (425°F) until done and lightly browned, 20-25 minutes.
