Dessert Recipes - Marshmallow Peppermint Icing Recipe

Ingredients 

• 2 Tbs water                             

• 1/2 cup granulated sugar                

• 1 egg white, beaten stiff               

• 3/4 cup marshmallow whip    

• 1/4 tsp peppermint extract

• Few drops red food coloring  

• Few grains salt

Makes 2 1/4 cups icing or enough for a 13 x 9 x 2-inch loaf cake

Method:

1. Boil water and sugar together until the soft ball stage is reached (234°F). Slowly pour hot syrup over beaten egg white, beating constcll1tly.

2. Add marshmallow whip, salt, extract and food coloring; bndt until cool.
