Dessert Recipes - Marshmallow Peppermint Icing Recipe
Ingredients

2 Tbs water

1/2 cup granulated sugar

1 egg white, beaten stiff

3/4 cup marshmallow whip

1/4 tsp peppermint
extract

Few drops red food
coloring
-
Few grains
salt
Makes 2 1/4 cups icing
or enough for a 13 x 9 x 2-inch loaf cake
Method:

Boil water and sugar together until the soft ball
stage is reached (234°F). Slowly pour hot syrup
over beaten egg white, beating constcll1tly.

Add
marshmallow whip, salt, extract and food coloring;
bndt until cool.
