Dessert Recipes - Linzer Torte Recipe

Ingredients                 

  • 1 1/2 cups Blue Diamond Whole Natural Almonds

  • 1 cup butter or margarine

  • 1 cup sugar

  • 2 egg yolks, beaten

  • 1 1/2 tsp grated lemon rind

  • 2 cups sifted all-purpose flour

  • 1 Tbs cinnamon

  • 1/2 tsp. ground cloves

  • 1 cup raspberry jam


Method:

  1. Grind almonds in blender or food processor; set aside. Cream butter and sugar.

  2. Add egg yolks, ground almonds and lemon rind. Sift together flour and spices and add to creamed mixture.

  3. Knead until dough is firm and holds together. Pat two-thirds of dough into a 9-inch round cake pan, covering bottom and sides. The layer should be about 1/2 inch thick. Spread with jam.

  4. Form eight 1/2-inch thick strips with remaining dough. Make lattice top by placing 4 strips one way and 4 the opposite.

  5. Bake in 350°F oven for 30 to 40 minutes. Cool. Cut into pie-shaped wedges 1 inch wide at the rim.
