1/3 cup sugar

1/4 tsp salt

1/3 cup sifted flour

1/4 cup Argo or
Kingsford's Corn Starch

2 cups assorted fresh
fruit (mandarin oranges, sliced strawberries,
peaches, apricot halves, grapes, etc.)

Glaze (below)
-
Whipped cream
Makes 1 cup
Method:

Grease 9 x 1 1/2-inch round layer pan. Line with
waxed paper and grease again. In small bowl with
mixer at high speed beat eggs until fluffy.

Gradually add sugar and salt; beat until mixture is
doubled in bulk and mounds slightly when dropped
from a spoon, about 5 minutes.

Sift flour and corn
starch over egg mixture; thoroughly fold in. Pour
into prepared pan.

Bake in 350°F oven 25 minutes or
until cake springs back when lightly touched. Cool 10 minutes. Remove from pan; cool completely on wire
rack.

Place on serving plate. Arrange fruit as
desired on top of sponge layer. Spoon glaze evenly
over fruit. Let set 30 minutes. Garnish with whipped
cream.
Glaze:
In small saucepan mix together 1 Tbs corn starch, 1
cup apple juice and 1 Tbs lemon juice. Stirring
constantly, bring to boil over medium heat and boil
1 minute. Cool.
