Dessert Recipes - Frozen Pumpkin Dessert Squares Recipe

Ingredients 

• 1 1/2 cups graham cracker crumbs

• 1/4 cup sugar

• 1/4 cup butter or margarine, melted

• One 16-oz can Libby's Solid Pack Pumpkin

• 1/2 cup brown sugar

• 1/2 tsp salt

• 1 tsp ground cinnamon

• 1/4 tsp ground ginger

• 1/8 tsp ground cloves

• 1 quart vanilla ice cream, softened

• Whipped cream and toasted coconut (optional)

Method:

1. Mix crumbs with sugar and butter. Press into bottom of 9-inch square pan.

2. Combine pumpkin with brown sugar, salt and spices. Fold in ice cream. Pour into crumb lined pan. Cover; freeze until firm.

3. Take out of freezer about 20 minutes before serving. Cut into squares; top each square with whipped cream and toasted coconut.
