Dessert Recipes - Fresh Apple Cake Recipe
Ingredients

1 1/2 cups
all-purpose flour

2 tsp baking
soda

1 tsp salt

1 tsp ground
cinnamon

1 tsp ground nutmeg

1/2 cup margarine or
butter, softened

1 cup granulated
sugar

2 eggs
-
4 cups finely chopped, pared apples

1 cup Kellogg's
All-Bran cereal or
Kellogg's Bran Buds cereal

One 3-oz package
cream cheese,
softened

1 Tbs margarine
or butter,
softened

1 tsp vanilla
flavoring

1 1/2 cups sifted
confectioners' sugar
Method:

Stir together flour, soda, salt, cinnamon and
nutmeg. Beat the 1/2 cup margarine and the
granulated sugar.

Beat in eggs. Stir in apples,
cereal and flour mixture. Spread in greased 9 x 9 x
2-inch baking pan.

Bake at 350°F about 45 minutes
or until done.

To make frosting, beat cream cheese,
the 1 Tbs margarine and vanilla. Gradually add
confectioners' sugar, beating until smooth. If
frosting is too thick, add 1-2 tsp milk. Spread on
cooled cake.
Variations:
In place of Kellogg's All-Bran cereal, use 2 cups
Kellogg's 40% Bran Flakes cereal. Or crush 1 1/3
cups Kellogg's Cracklin' Bran cereal to coarse
crumbs.
