Dessert Recipes - Coffee Pecan Ice Cream Recipe

Ingredients 

• 2 eggs

• 1 1/3 cups sugar

• Two 13-oz cans Pet Evaporated Milk

• 1 cup whole milk

• 1 Tbs vanilla

• 2 Tbs instant coffee

• 1/4 cup boiling water

• 1 cup chopped pecans

Method:

1. Beat eggs and sugar in large mixing bowl until well blended. Stir in evaporated milk, milk and vanilla. Dissolve coffee in boiling water. Add to milk mixture.

2. Refrigerate until well chilled. Pour into ice cream freezer container.

3. Chum and freeze according to manufacturer's directions.

4. When ice cream is finished, stir in pecans.
