Coffee Cake

Makes 1 large coffee ring
Method:

Prepare Basic Sweet Dough but increase honey or sugar to
1/2
cup. Roll dough into a 14 x 10 inch-rectangle. Brush
1 tbsp melted butter over surface.

Combine and mix
1/4 cup brown sugar, packed, 2 tsp cinnamon, 3/4 cup
chopped pecans and 1 cup raisins or coarsely chopped
mixed candied fruit.

Sprinkle evenly over dough.
Roll up as for jelly roll, starting with long side.
Seal long edge. Form into a ring, seam side down, on
greased baking sheet. Fasten ends together by
moistening and pinching edges together.

Using
scissors cut two-thirds of the way through the ring
to center at 1 1/2-inch intervals. Turn each section
slightly to one side. Cover; let rise until double
in size.

Bake in moderate oven (350°F) until done
and browned, about 30 minutes. (Cover loosely with
aluminum foil if ring browns too quickly.)

If
desired, drizzle favorite confectioners' sugar icing
over ring while warm.
