Dessert Recipes - Carrot Cake Recipe

Ingredients              

  • 2 cups Bisquick Baking Mix

  • 1/2 cup packed brown sugar

  • 1/2 cup chopped nuts

  • 2 tsp ground Cinnamon

  • 1 tsp ground nutmeg

  • 1 1/2 cups shredded carrots

  • 1/3 cup vegetable oil

  • 3 eggs

  • 1/4 cup chopped nuts Cream Cheese Frosting

Cream Cheese Frosting:

  • One 3-oz package cream cheese, softened

  • 2 cups powdered sugar

  • 1 Tbs margarine or butter, softened

  • 2 to 3 tsp milk


Method:

  1. Heat oven to 350°F. Grease and flour square pan, 9 x 9 x 2 inches.

  2. Beat all ingredients except frosting and 14 c. nuts on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan.

  3. Bake until wooden pick inserted in center comes out clean, about 30 minutes. Cool; frost with Cream Cheese Frosting.

  4. Sprinkle with nuts. Refrigerate any remaining cake.

Cream Cheese Frosting: Mix all ingredients until texture is smooth.
