Dessert Recipes - Blueberry Muffins Recipe

Ingredients  

  • 2 cups flour

  • 1/3 cup sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 egg, slightly beaten

  • 3/4 cup milk

  • 1/2 cup Parkay Margarine, melted

  • 1 cup fresh blueberries

Makes 1 dozen muffins


Method:

  1. Combine dry ingredients. Add combined egg, milk and margarine, mixing just until moistened. Fold in blueberries.

  2.  Spoon into greased and floured medium-size muffin pan, filling each cup 2/3 full.

  3. Bake at 425°F, 20-25 minutes or until golden brown.

Variations: Substitute for fresh blueberries 1 cup: Well-drained, thawed frozen blueberries or cranberries Well-drained pitted dark sweet cherries Fresh cranberries.
