Basic Sweet Dough
Recipe
Ingredients

1/2 cup milk, scalded
-
1/3 cup honey or sugar
-
1 1/2 tsp
salt
-
1/4 cup butter
-
1 egg, beaten
slightly
-
1/2 tsp grated
lemon rind
-
1 1/4 -ounce
package active dry
yeast
-
1/4 cup warm water (105-115°F)
-
2 3/4 cups
(about) Unbleached
White Flour with
Wheat Germ
Makes 1 large loaf
Method:
-
Combine first 4 ingredients in bowl; mix and cool to
lukewarm.

Stir in egg and lemon rind, Dissolve
yeast in warm water. Stir into milk mixture.

Stir
flour into liquids, a little at a time, adding flour
as needed to make a stiff dough. Beat well after
each addition.

Turn dough onto lightly floured
board; knead until dough is smooth and elastic.

Place dough in well-greased bowl; turn dough to
grease top. Cover with damp towel; let rise in warm
place until double in size.

Punch down; let rest for
10 minutes. Prepare as directed for one of the
sweet breads listed below.
