Dessert Recipes - Basic Sweet Dough Recipe

Ingredients              

  • 1/2 cup milk, scalded

  • 1/3 cup honey or sugar

  • 1 1/2 tsp salt

  • 1/4 cup butter

  • 1 egg, beaten slightly

  • 1/2 tsp grated lemon rind

  • 1 1/4 -ounce package active dry yeast

  • 1/4 cup warm water (105-115°F)

  • 2 3/4 cups (about) Unbleached White Flour with Wheat Germ

Makes 1 large loaf


Method:

  1. Combine first 4 ingredients in bowl; mix and cool to lukewarm.

  2. Stir in egg and lemon rind, Dissolve yeast in warm water. Stir into milk mixture.

  3. Stir flour into liquids, a little at a time, adding flour as needed to make a stiff dough. Beat well after each addition.

  4. Turn dough onto lightly floured board; knead until dough is smooth and elastic.

  5. Place dough in well-greased bowl; turn dough to grease top. Cover with damp towel; let rise in warm place until double in size.

  6. Punch down; let rest for 10 minutes. Prepare as directed for one of the sweet breads listed below.
