Dessert Recipes - Almond Penuche Recipe

Ingredients 

  • 3 cups brown sugar, packed

  • 1/8 tsp salt

  • 1 cup milk

  • 2 Tbs light corn syrup

  • 2 Tbs butter or margarine

  • 1 tsp vanilla

  • 1 cup toasted blanched slivered almonds


Method:

  1. In saucepan combine sugar, salt, milk and syrup. Cook over low heat, stirring constantly until sugar is dissolved.

  2. Boil gently, stirring often to 235°F, or until a little mixture forms a soft ball in cold water.

  3. Remove from heat. Add butter and cool without stirring. Add vanilla. Beat until  creamy and no longer shiny.

  4. Stir in almonds and pour into buttered 8-inch square pan. Cool and cut into squares.
