Dessert Recipes - Peanutty Clusters Recipe

Ingredients              

  • 1/2 cup/120 ml packed light brown Sugar

  • 1/2 cup/120 ml sugar

  • 3/4 cup/180 ml cocktail peanuts

  • 1 1/2 cups/360 ml flour

  • 3/4 tsp/4 ml baking soda

  • 1/2 tsp/2 ml baking powder

  • 1/4 tsp/1 ml salt

  • 1 cup/240 ml butterscothch-flavored baking chips

  • 1/2 cup/120 ml coconut

  • 1/2 cup/120 ml (1 stick) butter, softened

  • 1/2 cup/120 ml creamy peanut butter

  • 1 egg

  • Several tablespoons sugar

(Makes about 4 dozen.)


Method:

  1. Instructions for jar: Place brown sugar in a 1 liter jar and press down evenly.

  2. Pour sugar evenly over brown sugar.

  3. In medium bowl, combine flour, baking soda, salt. Mix well. Pour half of mixture over peanuts, pressing down firmly.

  4. Pour butterscothch chips over flour in jar and top with remaining flour.

  5. Place coconut on top of flour and press down firmly. Place lid on jar.

  6. For baking: Preheat oven to 315(190C). Empty contents of jar into large bowl and add butter or margarine. peanut butter and egg.

  7. Beat on low speed or by hand to blend. Roll heaping teaspoonfuls of dough into balls and place 3 inches (8 cm) apart on un-greased cookie sheet. Fatten with bottom of glass dipped in sugar.

  8. Bake for 10 to 12 minutes or until edges are browned. Remove from oven and let cookies cool on cookie sheet for 1 minute before transferring to cooling rack.
