Dessert Recipes - Iced Pineapple Cookies

Ingredients

1/2 cup sugar

1/2 cup packed
brown sugar

2 cups flour

1/2 tsp baking
powder

1/2 cup chopped
pecans

1/2 cup shredded
coconut

1 egg
-
1 (8 ounce) can
crushed pineapple, with juice

1 teaspoon vanilla

1/2 cup (1 stick)
butter, softened
Pineapple Icing
(optional):
Method:

Instructions for jar: Spoon sugar into 1
liter jar. Spoon brown sugar over sugar.

Combine flour with
baking powder and spoon brown sugar over sugar.

Layer pecans over
flour mixture and coconut over pecans.

For baking: Preheat oven to 350(176C).
Empty contents of jar into large mixing bowl and
stir to combine ingredients. Drain pineapple juice
and save.

In small bowl, whisk egg, pineapple
and vanilla. Add egg mixture to dry ingredients and
stir well. Drop dough by teaspoonfuls on sprayed
baking sheet and bake for 12 to 14 minutes.

Remove
from oven and transfer to cooling rack. If desired,
use reserved juice in icing recipe and frost when
cool.
To make Icing:
Combine sugar and butter in small mixing bowl. Add
enough reserved pineapple juice to reach spreading
consistency. Frost
when cool.
