Dessert Recipes - Gingerbread Rounds Recipe

Ingredients              

  • 1 1/2 cups sugar

  • 3 cups flour

  • 1 1/2 tsp baking soda

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 1/2 tsp cinnamon

  • 3 tsp ground ginger

  • 2 eggs

  • 1 cup salad oil

  • 1/3 cup molasses

  • Several tablespoons sugar

(Makes 4 dozen)


Method:

  1. In large bowl, combine all ingredients and mix well.

  2. Spoon cookie mixture into 1 liter jar, packing down after each addition so all mixture fits.

  3. Put lid on jar to close.

  4. Preheat oven to 350 (176C). Empty contents of jar into large bowl.

  5. Add eggs, oil and molasses. Beat on low speed until dough is thoroughly mixed.

  6. Roll teaspoonfuls of dough into balls and dip in sugar to coat Place 3 inches (8 cm) apart on lightly greased cookie sheet.

  7. Bake for 12 to 14 minutes. Remove from oven and let cookies cool on cookie sheet for 1 minute, then transfer to cooling rack.
