Dessert Recipes - Classic Shortbread Recipe

Ingredients              

  • 3 cups flour

  • 1 cup powdered sugar

  • 1/2 tsp salt

  • 1/3 mixture from jar

  • 1/2 cup (1 stick) butter at room temperature

  • 1/4 teaspoon vanilla


Method:

  1. Instructions for jar: Combine flour, sugar and salt. Spoon into 1 liter jar.

  2. For baking: Preheat oven to 3250 (162°C). Place butter and vanilla in medium bowl and stir in one-third mixture from jar, a liter at a time, until all ingredients blend. (A wooden spoon works well for mixing this stiff dough.)

  3. Turn mixture out onto lightly floured surface and knead lightly until smooth. (Don't overwork dough.) Pat dough out into 1/4-inch (.6 cm) thick circle on un-greased baking pan.

  4. Cut dough circle into 8 equal wedges, like a pie, and prick entire surface with fork.

  5. Bake for 20 to 25 minutes until shortbread is very light brown. Remove from oven and cool for about 10 minutes before cutting pieces apart with sharp knife.
