Dessert Recipes - Chocolate-Almond Biscotti Recipe

Ingredients              

  • 1 1/4 cups sugar

  • 1/4 cup unsweetened cocoa powder

  • 2 1/4 cups flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup chopped almonds

  • 2 eggs

  • 1 teaspoon almond extract

  • 1/2 cup (1 stick) butter, softened


Method:

  1. Instructions for jar: Spoon sugar into 1 liter jar and then spoon cocoa powder over sugar.

  2. Combine flour, baking powder and salt. Spoon over cocoa powder. Spoon almonds over flour and press gently to fit.

  3. For baking: Preheat oven to 350 (176C). In large mixing bowl, beat eggs with almond extract and butter.

  4. Add contents of jar, a liter at a time, to butter mixture and stir well after each addition. (Dough will be stiff.)

  5. Divide dough in half. Shape each half into log about 12 inches long. Place both logs on sprayed baking sheet and bake for 30 minutes or until logs set.

  6. Remove from oven and cool on baking sheet for 10 minutes. Use sharp, serrated knife to cut each log diagonally into 1/2-inch (1.2 cm) slices.

  7. Place slices on baking sheets and bake for another 7 minutes. Turn each slice over and bake for another 7 to 8 minutes. Remove from oven and cool.
