Dessert Recipes - Apricot Squares Recipe

Ingredients              

  • 1 1/2 cups flour

  • 1 tsp baking powder

  • 1 1/4 tsp salt

  • 1/2 cup packed brown sugar

  • 1/2 cup sugar

  • 1 1/2 cups quick-cooking oats

  • 1/4 cup finely chopped almonds

  • 3/4 cup (1 1/2 sticks) butter, softened

  • 3/4 cup apricot preserves


Method:

  1. Instructions for jar: Combine flour, baking powder and salt. Spoon into 1 liter jar.

  2. Spoon brown sugar over flour mixture. Layer sugar, oats and almonds over brown sugar.

  3. For baking: Preheat oven to 375° (190°C). Empty contents of jar into large mixing bowl. Stir to thoroughly mix dry ingredients.

  4. Cut butter into dry ingredients until mixture is crumbly.

  5. Press two-thirds crumb mixture into sprayed 9 x 9-inch (23 x 23 cm) baking pan.

  6. Spread preserves evenly over crumb mixture in pan. Sprinkle remaining crumb mixture over preserves.

  7. Bake for 30 to 35 minutes or until top is nicely brown. Remove from oven, cool and cut into squares.
