Cold Desserts Recipes - Shortbread Recipe

Ingredients

  • 100g/4oz unsalted butter

  • 50g/2oz caster sugar

  • 100g/4oz plain flour

  • 50g/2oz rice flour

Serves 4-8


Method:

  1. Preheat the oven to 160°C/325°F/Gas mark 3. Place a 15cm/6in plain flan ring on a baking sheet.

  2. Beat together the butter and sugar until light and fluffy. Stir in both flours, then knead lightly until smooth.

  3. Press the dough evenly into the flan ring, then lift the ring away. Crimp the edges of the dough with your thumb and finger. Prick the surface of the shortbread with a fork and mark into 6 or 8 wedges.

  4. Bake for 40 minutes, until pale biscuit colored and just firm to the touch. Leave the shortbread to cool for a few minutes, then carefully transfer to a wire rack to cool completely.
