Drain the
pineapple, reserving the juice. Put the pineapple
juice, orange juice, apple juice, liqueur and honey,
if using, in a large serving bowl and stir.
Segment the
oranges, catching any juice in the bowl, and put the
orange segments and pineapple in the fruit juice
mixture.
Add the apples
and pears to the bowl.
Stir in the
plums, dates and apricots, cover and chill for
several hours. Decorate with fresh mint sprigs to
serve.
Cook's Tip:
Use other unsweetened fruit juices such as pink
grapefruit mid pineapple juice in place of the
orange and apple juice.
