Cold Desserts Recipes - Strawberry And Blueberry Tart

Ingredients

  • 225g/2 cups plain flour

  • pinch of salt

  • 75g/scant 3/4 cup icing sugar

  • 150g/generous 1/2 cup unsalted butter

  • 1 egg yolk

FOR THE FILLING

  • 350g/1 3/4 cups mascarpone

  • 30ml/2 tbsp icing sugar

  • few drops of vanilla essence

  • finely grated rind of 1 orange

  • 450-675g/4 1/2 cups fresh mixed strawberries and blueberries

  • 90ml/6 tbsp redcurrant jelly

  • 30ml/2 tbsp orange juice


Method:

  1. Sift the flour, salt and sugar in a bowl. Dice the butter and rub it in until the mixture resembles coarse breadcrumbs. Mix in the egg yolk and 10ml/2 tsp cold water. Gather the dough together, knead lightly, warp and chill for 1 hour.

  2. Preheat the oven to 190C/375F. Roll out the pastry and use to lien a 25cm/10in fluted flan tin. Prick the base and chill for 15 minutes in the fridge.

  3. Line the chilled pastry case with greaseproof paper and baking beans, then bake blind for 15 minutes. Remove the paper and beans and bake for a further 15 minutes, until crisp and golden. Leave to cool in the tin.

  4. Beat together the mascarpone, sugar, vanilla essence and orange rind in a mixing bowl until smooth.

  5. Remove the pastry case from the tin, then spoon in the filling and pile the fruits on top. Heat the redcurrant jelly with the orange juice until runny, sieve, then brush over the fruit to form a glaze.
