Cold Desserts Recipes - Plum And Port Sorbet

Ingredients

  • 900g/2ib ripe red plums, stoned and halved

  • 75g/1/4 cup caster sugar

  • 45ml/3 tbsp water

  • 45ml/3 tbsp ruby port or red wine

  • crisp sweet biscuits, to serve


Method:

  1. Place the plums in a saucepan with the sugar and water. Stir over a gentle heat until the sugar is melted, then cover and simmer gently for about 5 minutes, until the fruit is soft.

  2. Turn into a food processor or blender and puree until smooth, then stir in the port or red wine. Cool completely, then tip into a plastic freezer container and freeze until the sorbet is firm around the edges. Process until smooth, Spoon back into the freezer container and freeze until solid.

  3. Allow to soften slightly at room temperature fro about 15-20 minutes before serving scoops, with sweet biscuits.
