Cold Desserts Recipes - Gooseberry And Elderflower Cream

Ingredients

  • 500g/4 1/4 cups gooseberries

  • 300ml/1 1/4 cups double cream

  • about 115g/1 cup sifted icing sugar, to taste

  • 30ml/2 tbsp elderflower cordial or orange flower water (optional)

  • fresh mint sprigs, to decorate

  • almond biscuits, to serve


Method:

  1. Place the gooseberries in a heavy saucepan, cover and cook over a low heat, shaking the pan occasionally, until the gooseberries are tender. Tip the gooseberries into a bowl, crush them, then leave to cool completely.

  2. Beat the cram until soft peaks form, then fold in half of the crushed gooseberries. Sweeten with icing sugar and add the elderflower cordial, or orange flower water to taste, if using. Sweeten the remaining gooseberries.

  3. Layer the cream mixture and the crushed gooseberries in four dessert dishes or tall glasses, then cover and chill. Decorate the dessert with the fresh mint sprigs and serve with almond biscuits.
