Emerald Fruit Salad
Ingredients

30ml/2 tbsp lime juice

30ml/2 tbsp clear honey

green eating apples, cored and sliced

ripe Ogen melon, diced

kiwi fruit, sliced

star fruit, sliced

fresh mint sprigs, to decorate
Method:

Mix together the
lime juice and honey in a large bowl, then toss in
the apple slices.

stir in the
melon, kiwi fruit and star fruit. Place in a glass
serving dish and chill in the fridge before serving.

Decorate wit mint
sprigs and serve with yogurt or fromage frais, if
you wish.
Cook's Tip: Color-themed fruit salads are fun to create
and easy, given the wide availability of exotic fruits.
You could try an orange-colored salad using cantaloupe
melon, apricots, peaches or nectarines, oranges or
Satsuma's, and mango or pawpaw.
