Cold Desserts Recipes - Chinese Fruit Salad

Ingredients

  • 115g/1/2 cup caster sugar

  • thinly pared rind and juice of 1 lime

  • 400g/4oz can lychees in syrup

  • 1 ripe mango, stoned and sliced

  • 1 eating apple, cored and sliced

  • 2 bananas, chopped

  • 1 star fruit, sliced (optional)

  • 5ml/1 tsp sesame seeds, toasted


Method:

  1. Place the caster sugar in a small saucepan with the lime rind and 300ml/1 1/4 cups water. Heat gently until the sugar dissolves completely, then increase the heat and boil gently for about 7-8 minutes. Remove the saucepan from the heat and leave on one side to cool the syrup/

  2. Drain the lychees into a jug and pour the juice into the cooled lime syrup with the lime juice. Place all the prepared fruit in a bowl and pour over the lime and lychee syrup.

  3. Chill in the fridge for about 1 hour. Just before serving , sprinkle with toasted sesame seeds.

  4. Cook's Tip: Try different combinations of fruit into this salad. You might like to include papaya, kiwi fruit or pineapple for a change.
